Ah! This sweater is from Target, and it’s perfect to transition into fall! It’s cozy but still kinda airy which I love! It’s tunic length so you could wear it with leggings, but I really like it front tucked into my fave high waist skinnies from Madewell! I usually rock the 9” skinnies from Madewell, but recently bought this 10” pair and am really digging them! Also! I’ve been obsessed with this nude lip color by NYX. It’s from their lingerie line, and it is my go-to lip shade!! It’s a matte finish so a little goes a long way and it seriously lasts all day!
OK, so it’s no secret that I LOVE Mexican food! It may be the whole living in Texas thing, or the fact that I grew up on my Grandma’s tortillas, but me and Mexican food are BFFs. If I could, I would eat Mexican food every day and seriously never get tired of it! Obviously, though, if I did that, I would probably have to remove the “healthy lifestyle” tag from my website. LOL.
So, as much as I’d love to tell you that I’ve found a way to eat all the chips and salsa forever and ever and never gain an inch…. Sorry. I can’t. But! I can share with you some hacks we’ve tried on the traditional dishes that we LOVE to eat! Just a few tweaks to make them a tad healthier so that we can include them in our dinner rotations weekly!

Alright! If you are a burrito lover, then you’re totally gonna dig this healthy version of a Mexican classic! The cool thing is you can add or take away as many things as you like to make it your own!
There are so many options! The kids really love when we make burrito bowls because they get to come up with their own creations! They like for us to set up all the ingredients in a buffet style lineup so they can pick and choose their toppings! So fun!
OK! Here’s our version of the burrito bowls!
- Start with a base. I like to use salad greens, but you can totally use Spanish rice, or cilantro lime rice would be great too!
- Add your protein! For this recipe, we use grilled chicken breast seasoned with fajita seasoning and cut into strips! You could always use steak, shrimp, or even portobello mushrooms!
- Add your toppings! Some of our favorites are grilled corn, black beans, avocado, grilled onions, sour cream, salsa, crumbled bacon, cilantro, shredded cheese, and lime!
That’s literally it! It’s so easy Y’all! The idea is to replace the tortilla with veggies! As I said, I like to use salad greens as my base, but if you go the rice route, just remember to load up on the veggies to balance out the carbs in the rice. If you read my post on Diet Drama! How to Get Off the Roller Coaster!, then you know that after trying every diet known to man, I finally settled on a way of eating that allows me to enjoy the foods I love without ever having to “diet” at all! All I do is focus on eating protein, fat, fiber, and greens at every meal! So simple! This allows me to create meals that I know will keep my weight in check and promote wellness in my body!
